Vindaloo - Beef

Vindaloo is a chilli and vinegar based dish from Goa, in westcoast India. Goa was occupied by Portugal until 1961 when Indian armed forces liberated this territory. Having the presence for about 400 years, the Portuguese had their influence of chilli and vinegar on local foods. Vindaloo remains one of the most popular dishes in the Subcontinent. It can be made with any type of meat or sea food. Here is a recipe for Beef Vindaloo.
Serves 4-5
Preparation
Ingredients:
* 1 kilo diced beef
* 100 grams Vindaloo curry paste
* 1 sprig fresh or dried curry leaves.
* 2 tblsp vegetable oil
* 400 ml. water
* ½ can coconut milk (optional)
Method
* Heat oil in a pan and fry the curry leaves until discolored.
* Add diced beef and on high fire fry until the meat is seared well.
* Add the Vindaloo Curry Paste and fry for two minutes.
* Add water and coconut milk.
* Simmer till the beef is tender (stirring well) and the curry is thicker.
* Serve with Basmati rice.
